(Oro=Gold, Antico=Old) Behold the Old Gold, made in Tuscany and aged for at least eight months in a cellar, where it is regularly brushed with olive oil. Beneath a rind reminiscent of the burnt umber crayon in your childhood box of Crayolas is the golden-hued firm and flaky paste. The flavor offers the agreeable sheep milk trifecta: nutty, grassy, and gamy. When you see the red wax seal, you'll know it's the one. You can go Chianti, or go multi-national with a glass of Spanish Rioja.
